LEMON GINGER MINT SORBET

 

Ingredients:

3 – 4 lemons

¼ cup of lemon peel finely diced

2 tbsp of finely grated ginger

1 cup of water

½ cup of Organic Raw Honey

½ cup of lemon juice

½ cup of carbonated mineral water

¼ cup of finely chopped mint leaves

Ingredients:

3 – 4 lemons

¼ cup of lemon peel finely diced

2 tbsp of finely grated ginger

1 cup of water

½ cup of Organic Raw Honey

½ cup of lemon juice

½ cup of carbonated mineral water

¼ cup of finely chopped mint leaves

Directions:

In a saucepan combine and stir together, 1 cup of water, ½ cup of Organic Raw Honey, ¼ cup of finely diced lemon peels. Bring to a boil and then reduce heat to medium low for 5 minutes. After remove from heat and let cool down. Total cook time 8 minutes.

 

In a juicer or hand juicer squeeze juice from the lemon and make sure all seeds are removed. Need ½ a cup of lemon juice.

 

With a cheese grater – grate 2 tbsp of ginger zest.

 

In an ice cream maker or pitcher/large plastic cup or bowl combine all ingredients together: Syrup (lemon peels, water and raw honey), ½ cup of lemon juice, ½ cup of carbonated mineral water, ¼ cup of finely chopped mint leaves, and 2 tbsp of finely grated ginger.

 

If you don’t have an ice cream maker, use your pitcher, large plastic cup or bowl and cover with plastic wrap and place in freezer. Every hour remove from freezer and stir contents for a couple of minutes. Continue to do this every hour for 4 to 5 hours until desired frozen consistency. The more aeration the sorbet receives when you stir the ingredients, the lighter the weight it will have on the palate.
